Ranch Steak Platter I really enjoyed this one. It's real easy, rather quick-to-fix and it only dirties one pan! The marinade adds great flavor to both the meat and the vegetables, so be sure to spoon some extra over your serving! Ranch Steak Platter Marinade: 1/2 teaspoon (2.5 ml) salt 1/2 teaspoon (2.5 ml) oregano leaves 1/2 teaspoon (2.5 ml) pepper 2 T (30 ml) cider vinegar 2 T (30 ml) vegetable oil 1 T (15 ml) country-style Dijon mustard 1 teaspoon (5 ml) minced fresh garlic Steak: 1-1/2 pounds (675 g) sirloin steak, tenderized if desired 2 medium carrots, cut into 1-inch (2.5-cm) pieces 1 medium onion, sliced 1/4-inch (6-mm) thick 2 medium tomatoes, cut into 2-inch (5-cm) pieces 1 medium green pepper, cut into 1-inch (2.5-cm) strips In large skillet stir together all marinade ingredients. Coat both sides of steak with marinade; place in same skillet. Place carrots and onion around steak in marinade mixture. Cover; cook over medium-high heat, turning once, until browned (10 to 12 minutes). Reduce heat to medium. Add remaining ingredients. Cover; cook, stirring occasionally, until vegetables are crisply tender and meat reaches desired doneness (5 to 7 minutes for medium). Makes 4 servings.
