Beer Bread 2 2/3 cups self-rising flour (not cake flour) 12 oz beer, freshly opened, chilled or at room temperature That's it! Pre-heat oven to 375F. Lightly grease 9 x 5 x 3 inch loaf pan. Put flour in medium bowl. Add beer and stir with a rubber spatula just until mixed and flour is moistened completely. Pour into prepared pan. Bake 50 to 55 minutes until top is lightly browned, sides pull away from the pan and a toothpick inserted in center comes out clean. Cool pan on wire rack 5 minutes, then turn loaf out on rack to cool. Cut with serrated knife and serve! Variations: Cheddar-Scallion Mix flour with 1 cup (4oz) shredded sharp Cheddar Cheese, 1/2 cup thinly sliced scallions and 1 1/2 tsp. poultry seasoning. Add beer. Olive-Parmesan Mix flour with 1 cup coarsely chopped olives (or how about sun dried tomatoes)? 1/2 cup grated Parmesan cheese and 1 1/2 tsp. Italian seasoning. Add beer.
