ONE HOUR OAT BREAD 2 cups whole wheat flour 1 cup oat bran 1 cup rolled oats 1/4 cup raisins 1 T. baking powder' 2 cups buttermilk In a large bowl, combine the flour, oat bran, oats, raisins, baking powder. Pour in the buttermilk and use a large rubber spatula to combine well. If the dough becomes to stiff to stir, flour your hands and finish mixing by hand. Shape the dough into a round loaf 7" in diameter. smooth the top and sides. Line a baking sheet with parchment paper and set the loaf on it. Use a sharp knife to slash an x about 1/4 " deep in the top. If any raisins are visible, poke them into the dough with your finger so they won't burn. Sprinkle the loaf with a bit of flour. bake at 425 for about 45 mins, or until the bottom of the loaf sounds hollow when tapped. let cool competely before slicing. makes 1 loaf, 8 slices each slice=209 cals, 2.6 fat, 6.1 fiber, 2 chol, 191 sodium
