Friday Casserole This is kind of a basic tuna casserole, but good anyway! I liked the addition of peas and corn. Friday Casserole 8 oz (224 g) macaroni 1 or 2 (7 oz / 196 g) cans tuna, drained and flaked 1 cup (240 ml) canned, drained whole kernel corn 1 cup (240 ml) canned, drained peas or baby lima beans 1 cup (240 ml) cubed Cheddar cheese (sharp is good) 2 cups (480 ml) milk, heated 2 teaspoons (10 ml) salt 1/4 teaspoon (1.25 ml) pepper 1/4 cup (60 ml) dry bread crumbs 1 T (15 ml) butter or margarine Cook macaroni in boiling salted water, as directed on package, until tender. Drain. Put in greased 2-quart (2-liter) casserole. Add tuna, corn and peas. Melt cheese in milk; add seasonings. Pour over macaroni and fish-vegetable layer, mixing slightly. Sprinkle bread crumbs over top; dot with butter. Bake in 375 F (190 C) oven 20 minutes, or until browned. Makes 6 servings.
