Safari Supper This recipe is not your typical burger dish. The curry, ginger, peanut butter, honey and raisins give it a nice twist. It's certainly different and very yummy! 1-1/2 pounds (675 g) ground beef 1 medium onion, sliced 1 cup (240 ml) uncooked regular rice 2-1/2 cups (600 ml) water 2 teaspoons (10 ml) instant chicken bouillon 1 teaspoon (5 ml) curry powder 1/2 teaspoon (2.5 ml) salt 1/4 teaspoon (1.25 ml) ginger 1/4 teaspoon (1.25 ml) cinnamon 3 T (45 ml) chunky peanut butter 1 T (15 ml) honey 1/2 cup (120 ml) raisins Cook and stir meat and onion in large skillet until onion is tender. Drain off fat. Stir in remaining ingredients. TO COOK IN SKILLET: Heat mixture to boiling. Reduce heat; cover and simmer, stirring occasionally, until rice is tender, about 35 minutes. (More water can be added if necessary - watch carefully, I added about 1 cup / 240 ml more.) TO COOK IN OVEN: Turn mixture into ungreased 2-quart (2-liter) casserole. Cover and bake in 350 F (180 C) oven, stirring occasionally, until rice is tender, 50 to 60 minutes. (Add more water if necessary.) Makes 8 1-cup (240-ml) servings.
