Chicken Tremendous This casserole-type dish is full of flavor and real easy to make. Add a veggie or a salad and you've got dinner! Chicken Tremendous 3-4 pounds (1.35 to 1.80 kg) chicken pieces of your choice 1 envelope (about 1.2 oz / 33.6 g) dry onion soup mix 1 package (4-6 oz / 112-168 g) wild rice mix (*) 1 cup (240 ml) long grain white rice 1 can (10-3/4 oz / 301 g) cream of chicken soup combined with 1 soup can of water Grease a 13x9-inch (32.5x23-cm) baking pan and lay chicken pieces in it. Sprinkle with dry onion soup, wild rice mix (including seasoning packet if it came with one) and white rice. Pour chicken soup over all, making sure all rice is covered. Bake at 350 F (180 C) for about 2 hours. Check dish after 1 hour of baking to see if it's getting dry. Add water as needed. Check again after 30 more minutes. (I used a 6 oz / 168 g box of wild rice mix and ended up adding about 3/4 cup / 180 ml of water after 1 hour, and about the same amount 30 minutes after that.) Makes 4-6 servings. (*) Wild rice mix is a boxed or packaged blend of wild rice and other rices. It comes in different sized packages as well as different varieties. There is no wrong or right type for this recipe.
