Honey Barbequed Chicken Breasts Try this easy but super yummy chicken dish the next time you fire up the barbeque. I like to pound the chicken breasts first to make them tender, but if you do this, be sure to watch them closely because they cook so fast! The ingredients are listed as low-cal and low-sodium if you prefer that, otherwise use regular. Honey Barbecued Chicken Breasts 1 cup (240 ml) reduced-calorie ketchup 3 T (45 ml) lemon juice 2 T (30 ml) low-sodium Worcestershire sauce 2 T (30 ml) honey 1 T (15 ml) peeled, minced gingerroot 1 teaspoon (5 ml) minced garlic Vegetable cooking spray 6 (6 oz / 168 g) skinned chicken breast halves Combine first 6 ingredients in a saucepan. Bring to a boil, stirring frequently; reduce heat, and simmer 2 minutes. Remove from heat, and set aside. Coat grill rack with cooking spray; place on grill over medium-hot coals. Place chicken on rack; grill, covered, 5 minutes, turning frequently. Brush chicken with ketchup mixture. Grill an additional 12 minutes or until done, turning and basting frequently with remaining ketchup mixture. Transfer to a large serving platter. Makes 6 servings.
