Chocolate Bread Pudding 6 cups cubed French bread 1 1/2 cups evaporated skim milk 18 oz chocolate nonfat yogurt, divided 1/4 cup sugar 1 1/2 cups egg substitute or egg whites 3 tablespoons skim milk Place bread cubes in a large bowl; set aside. Combine 12 oz yogurt, egg substitute, evaporated milk and sugar in a small bowl. Pour egg mixture over bread cubes, stirring to coat well. Let stand 30 minutes. Spoon bread mixture into greased 8 inch square baking dish. Bake at 350 degrees for 30 to 35 minutes or until knife inserted in center comes out clean. Cool slightly. Blend milk into remaining yogurt in small bowl to make sauce. Serve bread pudding warm with chocolate sauce. Makes 8 servings 260 calories, 1 gm fat, 1 gm fiber
