Fruity Sugar Cookies 1 cup (240 ml) sugar 1 (3 oz / 84 g) package flavored gelatin (such as Jello) 3/4 cup (180 ml) shortening 2 eggs 1 teaspoon (5 ml) baking powder 3 cups (720 ml) flour 1/2 teaspoon (2.5 ml) salt Mix sugar and dry gelatin. Add the shortening and eggs and beat well. Add dry ingredients and mix well. (If dough is dry or crumbly, add a SMALL amount of water, a little at a time, till dough is moist and holds together.) Roll into 1-inch (2.5-cm) balls (or drop by teaspoon) on ungreased cookie sheet and flatten dough with the bottom of a glass dipped in sugar. These may also be rolled out and cut with a cookie cutter. Bake at 375 F (190 C) for 8 to 10 minutes or till light brown on the bottom and soft to the touch. Makes about 4 dozen.
