Treasure Chest Beef Loaf Applesauce is a nice addition to this tasty meatloaf. 1 cup (240 ml) soft bread crumbs 1/2 cup (120 ml) apple sauce 1 pound (450 g) ground beef 1 egg, slightly beaten 1 T (150 ml) finely chopped onion 1 teaspoon (5 ml) mustard 1/2 teaspoon (2.5 ml) salt Pepper to taste Topping: 1/2 cup (120 ml) apple sauce 1 T (15 ml) brown sugar 1 teaspoon (5 ml) vinegar 1/2 teaspoon (2.5 ml) mustard Mix bread crumbs and applesauce until well blended. Add beef, egg, onion and seasoning; mix well. Shape into a loaf and place in baking pan. With a spoon, make a cavity in top of loaf for topping. Combine topping ingredients and pour into cavity. Ana gives us another one from Peru: (aacflorez@go.com) Sea Shell with Parmesan Cheese (easy and delicious) 4 portions 12 shells butter salt pepper Parmesan cheese Put on a baking sheet or pyrex, 12 sea shells with the shellfish, drizzle over each one a teaspoon of butter or margarine, dash of salt, pepper and 2 Tablespoons of Parmesan cheese. Place in a hot oven for 7 to 8 minutes. Serve immediately and sprinkle with a little bit of lemon juice. The size aprox of a seashell here is 2 inches. Or you can substitute for clams. ~~~~~~~~~ Critter Corner ~~~~~~~~ Critters have nothing to do with recipes or cooking, except for maybe their licking up what we drop on the floor while cooking. He has made us laugh more than once during his stay. I have been having problems with something eating my tomatoes in the garden, my first thought was that we had raccoons. One day I was out gathering my cherry tomatoes and who came along to pick with me but Buddy! He sat there eating my tomatoes right off the vine!
