Ruby's Salsa 6 cloves garlic 4-6 jalapeno's (or your favorite hot pepper) 3 cups onion diced 3/4 c vinegar - (1/2 c wine and 1/4 c balsamic) 10 lbs. Paste tomatoes diced 3 t. salt 1/2 t. pepper 1/2 t. paprika 3 T. olive oil 2 t. chili powder 2 T. worcestershire 1 T dried cilantro (or adjust to substitute fresh) 3 c. green & red sweet peppers diced 1 T cumin 1 t. garlic powder 2 T lemon juice 2 T brown sugar couple dashes red pepper flakes Saute onions, garlic, hot & sweet peppers in oil for a few minutes. Simmer everything together in a pot for 10 min. Pack in pints leaving 1/2" headspace, put in boiling water bath for 15 min. This recipe makes 11 pints. I don't do them in pints anymore .... for quarts I process 20 min at 10# pressure in my pressure cooker. Of course this recipe is variable .... taste as you go with hot peppers. Boo
