Fat-Free Waldorf Salad 2 medium apples, cored and chopped (1 green, 1 red preferred) 1 T (15 ml) + 3 T (45 ml) orange juice 1 T (15 ml) lemon juice 3/4 cup (180 ml) chopped celery 1/3 cup (80 ml) chopped dates 1/3 cup (80 ml) raisins 1/2 cup (120 ml) plain nonfat yogurt (or 1/2 cup / 120 ml fat-free    sour cream) 2 T (30 ml) honey Toss apples with 1 T (15 ml) only of the orange juice and 1 T (15 ml) lemon juice and mix well to preserve color.  Add celery, dates and raisins. Mix together yogurt, honey and remaining orange juice to make a smooth dressing.   Pour over fruit mixture and stir until evenly blended. Cover and chill 30 minutes before serving to give flavors a chance to mingle.   Toss again before serving.  Use a slotted spoon to serve. Makes 6 servings.
