Hawaiian Chicken Salad 2 cups cooked chicken, cubed 2 cups cold cooked brown rice (I use quick-cooking) 1 cup celery, diced 8 oz sliced water chestnuts, drained 15 1/4 oz pineapple tidbits, drained 1/3 cup light or fat free mayonnaise 2 Tbl skim milk 1 Tbl lemon juice 1/2 tsp curry 1/4 tsp pepper In a large bowl, mix chicken, rice, celery, water chestnuts and pineapple. In a smaller bowl, mix the remaining ingredients for the dressing. Toss dressing with the chicken mixture.
