Rice Salad Cook 1 c. raw rice (not instant). Marinate in 1/2 c. Viva Italian dressing and 1 T. soy sauce. Marinate overnight. Next day, add 1/2c. chopped scallions, 1/2 c. chopped celery, 2 c. fresh spinach (torn in pieces), 1 c. chopped water chestnuts (drained), and 1 box of frozen peas. May be doubled. This is VERY different and VERY well liked.
