Kielbasa and Potatoes 6-7 Medium Potatoes (any kind will do), cut into a medium dice 1 medium onion (Maui Onions are the best), cut into med-fine dice 3/4 lb of Kielbasa (beef, turkey, low fat, any are great, but this doesn't work that good with the smoked style), cut into small bite-sized pieces Salt Pepper Garlic Powder (I have tried fresh garlic, but only works well if it's in a paste) Heat up about 2 tbs of vegetable oil in a 4 quart pan to medium-high heat (larger pan makes less mess, trust me), and add potatoes, and cover, stirring occasionally. Cook potatoes until about half-cooked then add your onion along with your salt, pepper, and garlic powder to taste (actually, I go by smell more than taste....if you can smell garlic, you know you have put enough in). Once potatoes are almost done, add kielbasa and cook until potatoes are done, about 5 minutes, kielbasa is pre-cooked so it doesn't take that long to cook. I like my potatoes to cook slowly, so that they don't get crispy, if you want crispy, just turn the heat up, let them get brown, then turn the heat back down, or you will most definitely have burnt taters. If you are trying to cut back on the fat, use the low-fat kielbasa, but you can also a non-fat cooking spray, the kielbasa will add enough moisture at the end.
