Whipped Sweet Potatoes 4 Medium sized sweet potatoes 2 sticks (1 cup) butter 3/4 cup brown sugar (more or less to taste Wash sweet potatoes (do not peel); poke holes into the potatoes and place them into a medium casserole dish. Bake at 375 until done. (fork should poke in easily and release the same) Peel sweet potatoes. Cut them into 1 - 1 1/2 inch wide pieces into a bowl. Using a potato masher or food processor, mash potatoes well. Add 3/4 cup (1 1/2 stick) butter and brown sugar, blend thoroughly. Return to casserole dish, bake for about 15 minutes at 350 - 375. Add remaining butter directly to center and bake for another 5 minutes. Remix before serving.
