Beer & Cheese Soup [slowcooker] 6-8 servings 1 cup carrots, chopped 1 cup celery, chopped 1 cup yellow onions, chopped 2 tsp. peanut oil 6 cups chicken stock 1 cup cheddar cheese, grated 2 tsp. flour Salt n pepper 1/2 tsp. dry mustard 1/8 tsp. Tobasco sauce 1/8 tsp. Worcestershire sauce 24 oz beer kielbasa Sauté' onions, celery & carrots in oil till lightly browned. Put all ingredients in crock-pot except cheese & beer in crock-pot & cook on high for 2 hours. Dredge cheese in flour & mix into soup, stirring constantly till thickened. Stir often till serving. Add beer & stir till hot. *Option* A salad and crusty bread makes for a wonderful, filling dinner.
