Crockpot Chili Verde 1 onion coarsely chopped 1 bell pepper, green coarsely chopped 4 garlic clove minced 1 teaspoon olive oil 4 ounce can diced green chilies 7 tomatillos 2 pounds pork, lean trimmed of all visible fat and diced 1 teaspoon oregano 1 teaspoon cumin 1/4 teaspoon ground red pepper flakes 1/2 cup Tecate (or any) beer First, sauté one onion and one green pepper, coarsely chopped, with three or four cloves of garlic, minced, in olive oil. Throw into the crockpot. Also throw in a small can of diced green chilies. throw the tomatillos in the pot. Add the pork, and brown in the pan that you sautéed the onion in. Now add the seasonings. Let it cook in the crock pot all day. If you are doing the potato thing, make the sauce (minus the pork) and then put potato slices into the crock pot and cover with the sauce. Stir to blend and let cook for at least 8 hours. Makes 8 servings
