kielbasa recipe: Red beans and Rice [slowcooker] I was unable to find the usual andouille sausage I used in this dish. I have substituted kielbasa with good results, although any sausage will work (I've used leftover brats too) 1 pound of kielbasa, chopped (brown first to reduce the fat content in the finished dish) 1 large onion, chopped 1 large bell pepper, chopped 2 stalks celery, chopped 3 garlic cloves, mashed and minced 1/2 tsp Tony Chachere's seasoning (if you dont have this, use any cajun seasoning mix or add salt, pepper and red pepper to your taste) 4 cans of red kidney beans 1 bay leaf Throw in the crockpot , cover and cook on low all day. When you get home, remove the lid and kick it up to high for about 30 minutes to reduce the liquid. Remove about one cup of the beans, mash and return to the pot to thicken. Taste, and adjust the salt and red pepper to your liking. Serve over steamed rice.
