Round 'em Up Beef Stew 3 lbs. diced chuck roast or stew meat 2 medium onions, quartered 1 green pepper 1 cup diced carrots 5 medium potatoes, diced 1 cup chopped celery 2 TBS. hot sauce (optional) 1 TBS. Worcestershire sauce 1 TBS. sugar 1 TBS. salt pepper to taste 1 2/3 cup tomato juice* Put meat, vegetables and seasoning in a roaster, add tomatoes or juice and a little water; stir well. Bake at 250 degrees (that's right 250!) oven for 5 hours. Do not raise lid until 5 hours has passed. Serves 6. *1 can (1 lb. 12 oz.) tomatoes may be used. It is important you do not raise the lid. The smell might entice you to look but please do not. When it is done, set it on the top of the stove with lid still intact and bake up a batch of corn bread or muffins. When they are done serve the cornbread and the stew straight from the roaster.
