BROCCOLI QUICHE 6 oz cooked chicken (1 1/2 cups) 2 cups (one 10oz package) chopped broccoli, thawed and squeezed dry 1 cup part-skim Ricotta cheese 1/2 cup egg substitute (or 6 egg whites) 6 Tbsp plain yogurt 1 Tbsp + 1 tsp margarine, melted 2 Tbsp grated Parmesan cheese 1/2 tsp baking powder 1/4 tsp salt Heat oven to 350. Spray a 9" pie plate with cooking spray. Put half of chicken and broccoli into the pie plate. Combine the rest of the ingredients and puree in a food processor. Pour into the pie plate. Bake 30 to 45 minutes until set. 4 servings, 3 POINTS each
